It has a Janka hardness rating of 1,100 to 1,750 lbf, making it hard enough to resist deep scoring but soft enough to protect sharp knife edges from dulling. Additionally, its natural wood oils provide inherent water and microbial resistance, which helps prevent warping and bacterial growth in busy kitchens.

We use FDA-approved, food-grade materials and adhesives across all product lines.
